Quick Chicken and Potato Soup

Ingredients
2 cups chicken broth
1 small leek, chopped
4 medium potatoes (1 grated, 3 cut into small cubes)
2 cloves garlic, finely chopped
350g chicken breasts cut into 25mm pieces
1/4 teaspoon paprika
1/4 teaspoon salt
2 stalks celery, thinly sliced
1 cup frozen peas
Method
Put broth and 2 cups water into a medium pot and bring to a boil. Add leeks, grated potato, garlic, chicken, paprika and salt, return to a boil, cover and reduce heat to medium low. Simmer for 10 minutes. Add cubed potatoes and celery and simmer for 15 minutes more. Add peas, remove pot from heat and set aside, covered, for 5 to 10 minutes. Ladle soup into bowls and serve.
